I haven't had much homemade kraut lately. I need to get on makin' a fresh batch of Kim Chi I think.
I got a sample jar of a friends' sea kraut...just green cabbage and yummy seaweed and added a couple scoops to my lunch-time kale salad today and it was SO good.
Yum.
What do you folks like to eat your kraut with??
I like it especially on sandwiches...it's good with eggs too!

Thu, June 14, 2007 - 7:06 PMit's sooo good with buckwheat (kasha). Cook up the roasted kasha just like rice, add kraut, enjoy. I do this with rice sometimes too. -

Here's another good one.
Baked Yam cut open with the following on top...
1:1 tahini:miso spread (maybe add a tiny bit of water to make it saucy)
a bunch of cilantro
kim chi (or any kind of kraut...but the ginger's good with this)
sunflower seeds.
(I learned this one from one of my college pals...it's SOO good, and really colorful too!) -

Fri, December 14, 2007 - 1:20 PMA comfort food of mine was something my gramma used to make. Looking back on the way she did it seems totally gross, but I bet I could make a better, healthier alternative.
She'd cut up hot dogs, and heat them up in a pan with a fresh jar of sauerkraut, and a couple tablespoons brown sugar. It was sweet, sour, and served with fried potatoes. Yum!
What could I use as a sub for hot dogs at this point? Tofu dogs maybe, but hmm.. Need to think of a more fun alternative...

Fri, December 14, 2007 - 2:03 PMI take it you don't eat meat but I'm thinking some really good chicken sausages cut up would be tasty. Some brands are even free range and better quality than you average sausages but it's an idea. -

Fri, December 14, 2007 - 2:10 PMEven when I was eating meat I couldn't handle sausages.. It's really too bad, too.. I loved the flavor, but couldn't handle the gristly texture. My mom used to buy ground sausage and pat it out REALLY thin, then practically burn it for me. Only way I could eat it, really... :\
I could handle the hot dogs as a kid because they were those way overprocessed ones with the cheese inside. Stopped eating hot dogs once Gramma died and the kraut dogs were never cooked anymore.. :P
